  1. Directions Soak overnight and then boil some dried figs in water (which if you like you may sweeten with sugar) for 20 minutes.

  2. Then take out the figs, drain them, and dry them with a cloth.

  3. Then steep them for a little while in some rum or brandy.

  4. Make a thick batter with sifted flour, a pinch of salt, a little oil, and some cold water .

  5. Stir in the rum or cognac in which you soaked the figs.

  6. Then dip the figs, one by one, into the batter, and fry them in boiling fat.

  7. Serve very hot, sprinkled with icing sugar.
