  1. 1 3/4 cups flour

  2. 2/3 cup brown sugar

  3. 2 1/2 teaspoons baking powder

  4. 1/4 teaspoon salt

  5. 1 egg

  6. 3/4 cup orange juice

  7. 1/2 cup sour cream

  8. 1/4 cup vegetable oil

  9. 1 tablespoon orange zest

  10. 1 1/2 teaspoons vanilla

  1. Combine flour, brown sugar, baking powder and salt.

  2. Add egg, orange juice, sour cream, vegetable oil, orange peel and vanilla.

  3. Stir until just mixed.

  4. Fill paper-lined or well greased muffin cups 2/3 full.

  5. Bake at 350 degrees for 23-25 minutes.
