  1. 6 ounces dark chocolate (70% cacao), coarsely chopped

  2. 1 cup 15% or 35% cream

  3. 2 cups milk

  4. 4 eggs, lightly beaten

  5. 1/2 cup brown sugar

  6. 1/4 teaspoon ground cinnamon

  7. 1/4 teaspoon vanilla extract

  8. 4-6 slices firm white sandwich bread (preferably day-old) or brioche

  9. 1/4 cup salted butter

  10. 2 -40/10 bananas, sliced

  1. In a saucepan, heat the first three ingredients over low heat, stirring frequently, until the chocolate melts. Set aside.

  2. In a large bowl, whisk together the milk, eggs, brown sugar, cinnamon and vanilla. Thoroughly soak the bread in the mixture, about 3 minutes per side.

  3. In a large non-stick skillet over medium heat, melt half the butter until it foams. Fry half the bread until golden, 4 to 5 minutes a side. Keep warm. Repeat with the remaining butter and bread.

  4. Top each piece of French toast with banana slices and drizzle with warm (not hot) chocolate sauce.
