  1. 3 pounds chicken thighs or legs, skinless, cut in half with bone

  2. 1/2 cup white vinegar

  3. 1/2 cup soy sauce

  4. 1 teaspoon brown sugar

  5. 2 Tablespoon Peppercorns , crush about half

  6. 5 cloves garlic , crushed

  7. 3 bay leaves kosher salt to taste

  1. Combine all ingredients in a pan, cover and marinate 1 to 3 hours. Bring to a boil then lower heat to simmer for about 30 minutes. Remove cover and simmer for another 15 minutes, or until much of the liquid has evaporated and the chicken is lightly brown .
