  1. 2 1/2c Water

  2. 1/2c Grits, regular

  3. 1 c Sugar

  4. 2 tb Butter or margarine

  5. 2 lg Eggs, beaten

  6. 1/2c Coconut, flaked

  7. 1/2c Sour cream

  8. 1 6 oz chocolate-graham

  9. Cracker crust, prepared

  10. Whipping cream, whipped

  11. And sweetened (for garnish)

  12. Maraschino cherries (for Garnish)

  1. + In a medium saucepan, bring the water to a boil; stir in the grits.

  2. Cover, reduce heat, and simmer for 15 minutes, stirring occasionally.

  3. Remove from the heat, and stir in the sugar and butter/margarine.

  4. Gradually add to the bowl containing the beaten eggs, about 1/4th of the hot mixture; add the egg mixture to the remaining hot mixture, stirring constantly.

  5. Cook over low heat until the mixture thickens and reaches 160 degree F (about 8 minutes).

  6. Remove from heat, and stir in the flaked coconut and sour cream.

  7. Spoon mixture into the prepared pie crust; cover and chill.

  8. Garnish, if desired.

  9. Makes one 9-inch pie.
