  1. For rolls:

  2. 12-ounces bacon

  3. 1 head leaf lettuce thinly sliced

  4. 1 bunch green onions thin sliced

  5. 1 tablespoon saved for dipping sauce

  6. 1/2 teaspoon salt

  7. 1/2 package rice noodles prepare according to package

  8. 2 hard boiled eggs sliced lengthwise

  9. 12 spring roll wrappers

  10. For dipping sauce:

  11. 1/4 cup rice wine vinegar

  12. 2 tablespoons bacon fat

  13. 2 tablespoons oil

  14. 1 teaspoon dark sesame seed oil

  1. In large skillet fry bacon reserving 1/4 cup of drippings. place 1 egg slice on each wrapper that has been dipped into water according to package directions. Dice 1 slice bacon, and divide rest between Spring Roll Wrappers. Mix lettuce and onions with 2 tablespoons hot bacon drippings and salt. Top bacon with lettuce and green onion mixture, then noodles. Roll up like egg roll. Place egg side up in spoke pattern on serving plate. To make dipping sauce, whisk together sauce ingredients, then heat. Pour into bowl top with reserved green onions, and bacon. Place bowl in center of serving plate. Yield: serves 12 Notes: These can not be made too far in advance. They can be heated in microwave.
