  1. 8 ounces quinoa

  2. 1 (14 1/2-ounce) can chicken broth

  3. 1 cup water

  4. 1/4 teaspoon salt

  5. 1/8 teaspoon ground black pepper

  6. 2 tablespoons butter, cut into bits

  1. In a 2-quart saucepan, combine quinoa with broth and water. Bring to a boil; reduce heat. Simmer, covered, for 12 to 15 minutes, or until quinoa is tender and liquid is absorbed. Stir in salt and pepper. Dot top with butter and serve.
