  1. 2 cups all-purpose flour - sifted

  2. 1 cup sugar

  3. 4 tablespoons of butter

  4. 2 eggs

  5. 2 1/2 tsp. baking powder

  6. 4 ripe bananas

  7. 1/2 cup buttermilk

  8. 1 lemon

  9. 1 tsp. vanilla

  10. Topping:

  11. 1/2 cup shredded coconut

  12. 2 tablespoons of brown sugar

  1. Preheat Oven 350 degrees:

  2. Sift together the flour and baking powder.

  3. In a mixer blend the bananas. Add the butter, vanilla, sugar, eggs and lemon zest.

  4. Add the sifted ingredients slowly.

  5. Place the batter in buttered 8 x 8 baking pans.

  6. Combine the coconut and brown sugar and sprinkle on top of the cakes.

  7. Bake about 30-35 minutes or until the toothpick test comes out clean.
