  1. 1 cup uncooked bulgur

  2. 2 cups boiling water

  3. 1/4 cup finely chopped fresh mint

  4. 1 cup finely chopped fresh parsley

  5. 1-2 scallions, finely chopped

  6. 1 cup crumbled Feta

  7. 3 tablespoons lemon juice

  8. 1 tablespoon olive oil

  1. Put bulgur in a bowl and pour the boiling water on top. Cover with plastic wrap or a lid and let sit for 10 minutes, until bulgur is tender and just a little chewy. Drain off any remaining water.

  2. Mix in the herbs, scallion and feta.

  3. In a small bowl whisk together the lemon juice and olive oil. Mix well into the salad. Add salt if needed.
