  1. 1/2 lb Mozzarella

  2. 1/2 c Basil; fresh chopped

  3. 4 Tomatoes

  4. Dressing: 1/4 c Vinegar; red wine or balsam

  5. 1/2 ts Salt

  6. 3/4 c Oil; olive

  7. 1/4 ts Pepper

  1. Slice cheese as thin as possible. Slice tomatoes. On large platter, arrange alternate slices of cheese and tomatoes. Sprinkle with basil. DRESSING: Combine vinegar, salt, pepper and olive oil and drizzle over tomatoes and cheese. Let marinate at room temperature for up to 1 hour before serving. Make this only when tomatoes are in season
