  1. Ingredients (serves 10) 500ml (2 cups) water 500ml (2 cups) chicken stock 340g (2 cups) polenta (cornmeal) 70g (1 cup) finely grated parmesan 125g (1/2 cup) mascarpone

  1. Method Bring the water and stock to the boil in a large heavy-based saucepan over high heat. Gradually add the polenta in a thin steady stream, whisking constantly until the polenta is incorporated. Reduce heat to low and cook, stirring constantly, for 10 minutes or until polenta is soft. Remove from heat. Add the parmesan and mascarpone and stir to combine. Taste and season with salt and pepper. Serve immediately.
