  1. 0 3/4 cup(s) quinoa

  2. 1 1/2 cup(s) water Kosher salt

  3. 1 teaspoon(s) cumin powder

  4. 2 tablespoon(s) fresh lime juice

  5. 6 tablespoon(s) vegetable oil Freshly ground pepper

  6. 1 can(s) black beans , rinsed

  7. 1 small red bell pepper , finely diced

  8. 1/2 cup(s) fresh cilantro , finely chopped

  9. 1/2 medium onion , finely chopped

  1. In a medium saucepan, combine the quinoa, water, and a pinch of salt; bring to a boil. Cover and simmer over low heat until the water is absorbed, about 15 minutes. Refrigerate for about 20 minutes, or until cooled. Meanwhile, in a medium bowl, mix cumin powder, lime juice and oil and blend. Season with salt and pepper to taste, or omit salt and pepper entirely. Add the black beans, bell pepper, cilantro, and onions. Scrape the quinoa into the bowl, season with salt and pepper, and serve.
