  1. Jelly Roll

  2. 5 eggs, separated

  3. 1 c sugar

  4. 1 tb grated lemon rind

  5. 2 tb lemon juice

  6. 1 c sifted cake flour

  7. 1/4 ts salt

  8. confectioners sugar

  9. 1 c jelly

  10. Beat egg whites until stiff but not dry. Add 1/2 the sugar slowly

  11. beating constantly. Beat egg yolks until thick and lemon colored;

  12. add remaining sugar gradually, continuing to beat until stiff enough

  13. to hold a soft peak; add grated lemon rind and juice. Fold gently

  14. into egg whites. Combine flour and salt and fold quickly but lightly

  15. 11x16 inch

  16. 350 degree oven for 15 mintues being

  17. careful not to overbake it. Turn onto a clean towel well sprinkled

  18. with confectioners sugar. Remove paper and trim off crusts. Roll,

  19. lifting end of towel nearest you. Wrap in towel and cool. Unroll,

  20. spread with whipped jelly and roll again. Serves 8.
