  1. 2 tb Vegetable oil

  2. 2 each Garlic cloves, minced

  3. 1 medium Carrot, grated

  4. c

  5. Raw barley

  6. 1 each Bay leaf

  7. 2 1/2 c

  8. 4 c

  9. Cooked chick peas 3/4

  10. lb. Spinach, steamed & chopped

  11. 1 sm Zucchini, diced

  12. 1 1/2 ts

  13. Favourite curry powder 1/4

  14. Thyme 1/4

  15. ts

  16. Cumin

  17. Salt & pepper

  18. 2 c

  19. Stock

  20. 2 tb Lemon juice

  1. Heat oil & saute garlic for 1 minute.

  2. Add carrot, barley, bay leaf & 2 1/2 c stock.

  3. Bring to a boil, cover & simmer for 15 minutes.

  4. Puree half the chick peas & add to the pot with the spinach, zucchini & seasonings.

  5. Simmer covered for another 10 minutes.

  6. Add the rest of the chick peas, the remaining stock & lemon juice.

  7. Simmer gently for another 15 minutes until the barley is tender.
