  1. Stamp & Go (Codfish Cakes)

  2. Yield: 24 Cakes

  3. 1/2 lb codfish

  4. 1 c flour

  5. 1 ts baking powder

  6. 1/2 ts salt

  7. 1 eggs, slightly beaten

  8. 3/4 c milk

  9. 1 tb butter, melted

  10. 1 tb annotta oil

  11. 1 onions, chopped fine

  12. 1 hot pepper, chopped

  13. cooking oil

  14. Put the codfish in a bowl, cover with warm water and soak for 2

  15. hours or longer, according to the saltiness and hardness of the

  16. fish. Drain, rinse and place in a saucepan with boiling water to

  17. cover. Simmer gently, covered, until fish is tender, about 15

  18. minutes.

  19. Drain, remove skin and bones, shred fish finely. Sift flour, baking

  20. powder and salt together. Combine egg, milk, butter and annatto

  21. oil and stir in dry mixture. Add fish, onion and pepper and mix

  22. well. Drop by tablespoonful into hot oil, 370F, and fry until golden

  23. brown. Drain on paper towels and serve hot.
