  1. 1/2 c Oil

  2. 1 tb Chopped scallion

  3. 1/2 ts Crushed red-hot pepper

  4. 2 tb Hoison sauce

  5. 1 cn (8-oz.) bamboo shoots, diced

  6. 1 tb Corn starch

  7. 1 tb Light soy sauce

  8. 1 tb Sherry

  9. 2 Chicken breasts

  10. 1 ts Chopped ginger

  1. Bone chicken and cube it.

  2. Mix sherry, soy sauce and corn starch.

  3. Marinate chicken in cornstarch mixture for 15 minutes.

  4. Heat oil.

  5. Add chicken cornstarch mixture and stir-fry for 2 minutes.

  6. Remove chicken.

  7. Add bamboo shoots, hoison sauce, scallion, ginger and crushed red peppers.

  8. Stir well, then add chicken and serve.
