  2. CHERRY MUFFINS

  6. 3 1/3 c Unbleached Flour

  7. 1 tb Baking Powder PLUS

  8. 1 t Baking Powder

  9. 1 t Salt

  10. 1/4 c Sugar

  11. 1 lg Egg, Beaten

  12. 2/3 c Tart Cherries, Well Drained

  13. 2 ts Almond Extract

  14. 1 3/4 c Milk

  15. 1/3 c Vegetable Oil

  16. 1/3 c Nuts, Chopped (Optional)

  17. Here is a scratch muffin recipe that is as good as

  18. homemade blueberry muffins.

  19. Yield: 24 muffins

  20. Combine the flour, baking powder, salt, and sugar in a

  21. large mixing bowl. In another bowl, combine the eggs,

  22. milk, almond extract, and vegetable oil blending well.

  23. Add to the dry ingredients and mix only to blend, if

  24. using an elelctric mixer, use low speed, about 30

  25. seconds. Batter will still be lumpy. Gently fold in

  26. the drained cherries and chopped nuts. Spoon into well

  27. greased muffin tins filling each about 2/3 full,

  28. handling the batter as little as possible. Bake at 400

  29. degrees F. for 25 minutes or until done.
