  1. Spiced Peaches

  2. 8 lbs peaches peeled (small to medium sized)

  3. 4 sticks cinnamon

  4. 2 Tbsp whole cloves, crushed

  5. 1 Tbsp grated fresh ginger

  6. 6 cups sugar

  7. 1 quart vinegar

  8. Treat peaches to prevent darkening. Tie spices in spice bag. Combine

  9. sugar, vinegar, spice bag in large saucepot, boil 5 minutes. Drain

  10. peaches. Cook drained peaches in boiling syrup until they can be

  11. pierced with a fork but not soft. Remove from heat and allow

  12. peaches to sit in liquid overnight to plump.

  13. Next day bring to boil, remove spice bag. Pack peaches into hot

  14. 1/4" headspace. Ladle hot liquid over peaches

  15. 1/4"

  16. 20 min. Yield

  17. quarts.
