  1. 6 Roma tomatoes, chopped

  2. 4 garlic cloves, minced

  3. 2 seeded and minced jalapenos, plus

  4. 2 roasted, skinned and chopped jalapenos

  5. 1 red bell pepper, fine dice

  6. 1/2 red onion, fine chopped

  7. 2 dry ancho chiles, seeded, cut into short strips and snipped into pieces

  8. 1 tablespoon olive oil

  9. 1 lime, juiced

  10. Chili powder, salt, and pepper, to taste

  11. Fresh scallions, cilantro or parsley, to taste

  1. In a bowl, combine all ingredients. Place in refrigerator for up to 12 hours for flavor infusion.

  2. Serve with tortilla chips.
