  1. 9 medium potatoes (about 3 pounds)

  2. 1 package (16 ounces) process cheese (Velveeta), cubed

  3. 1 cup chopped onion

  4. 2 cups mayonnaise

  5. 1/2 pound bacon, cooked and crumbled, divided

  1. Cook potatoes in boiling salted water until tender. Drain and cool. Peel and cube potatoes; combine with cheese, onion, mayonnaise and half of the bacon in a large bowl. Spoon into a 13-in. x 9-in. baking dish. Sprinkle with remaining bacon. Bake, uncovered, at 350° for 50 minutes or until the top begins to brown. Yield: 10 servings.
