  1. Sliced Pear Butter

  2. 7 lg firm Barlett pears, pe

  3. 2qts

  4. 1/2 c lemon juice

  5. 1/4 c water

  6. 7 1/2 c sugar

  7. 1 ts cinnamon

  8. 1/2 ts allspice

  9. 1/4 ts cloves

  10. 3 oz pouch liquid pectin

  11. Combine pears into a lg saucepan with lemon juice and water, heat

  12. to boiling. cover and cook 10 minutes until pears are soft. Uncover

  13. and cook over high heat 10 minutes longer, stirring and mashing

  14. pears as they cook.

  15. In blender, puree half the mixture at a time until smooth (mixture

  16. 5 cups 5 cups,

  17. add water. Add sugar and spices, heat to boiling, stirring until

  18. sugar dissolves. Boil hard 1 minute remove from heat, stir in

  19. pectin.

  20. Pour into hot jars, leaving 1/4 inch headspace. Wipe rims. Adjust

  21. 15 minutes in boiling water bath. Yields:

  22. 9 pints.
