  1. 1 Wild goose

  2. 3 Dozen prunes

  3. Chicken broth

  4. 1 Onion; chopped

  5. Stick butter

  6. 1 cup Soft bread crumbs

  7. pounds Sausage

  8. 1 Egg

  9. Salt and pepper to taste

  10. teaspoon Sage

  11. 1 tablespoon Minced parsley

  12. 3 cups Chicken broth

  13. 4 tablespoons Goose drippings

  14. 1 tablespoon Each wine; brandy & gin

  15. Flour to thicken

  1. WINE SAUCE Cover prunes with chicken broth. Cook until tender. Drain and remove seeds from prunes. Saute onion in butter. Cook sausage, drain and crumble.

  2. Combine all ingredients and stuff goose. Run goose with oil and bake at 350 for 3-4 hours or until tender. Baste occasionally with drippings. WINE SAUCE: Boil stock down to 2 cups. Add remaining ingredients, except flour.

  3. Heat thoroughly, add flour to thicken and simmer 5 minutes.
