  1. 1 c. whole wheat flour

  2. 1 c. white flour

  3. 2 tsp. baking soda

  4. 1 1/2 tsp. ground cinnamon

  5. 3/4 c. wheat germ

  6. 1/2 c. Splenda

  7. 4 1/2 scoops vanilla protein powder

  8. 1/2 c. unsweetened applesauce

  9. 3/4 c. nonfat milk

  10. 4 egg whites

  11. 2 c. fresh shredded carrot s

  1. Preheat oven to 350 degrees. Mix flours, baking soda and cinnamon in a large bowl. Add wheat germ, Splenda and protein powder and mix well. In another bowl, combine applesauce, milk and egg whites (you may add up to ¼ cup oil for moisture - not included in calories); mix well. Add wet ingredients to dry and stir until just blended (will be lumpy). Gently fold in shredded carrots. Spray muffin pan with cooking spray then fill each cup with batter and bake for 18 minutes until brown and toothpick inserted into center of muffin comes out clean.
