  1. Pasta salad (good for picnics)

  2. 1 pkg cheese tortellini

  3. 1 can artichoke hearts

  4. 1 carrot, thinly sliced broccoli florets (or asparagus)

  5. 1 red bell pepper, sliced into strips

  6. 3 green onions, sliced thinly

  7. grated Parmesan cheese

  8. 1 clove garlic

  9. salt

  10. 1 tsp mustard

  11. 1/3 C balsamic vinegar

  12. 2/3 C olive oil or less

  13. basil

  14. pepper

  15. Cook the tortellini according to package directions. Drain and rinse the artichoke hearts and cut them into quarters. Add the

  16. remaining salad makings (except the parmesan) and toss with the

  17. dressing. Give it a generous sprinkling of parmesan and refrigerate.

  18. You might want to be a little easy on the salt in the dressing

  19. because of the parmesan and the cheese in the tortellini.
