  1. 6 catfish fillets -- (4-5oz ea)

  2. 1 egg

  3. 1 tablespoon water

  4. 1/2 cup cracker meal

  5. 1/4 cup parmesan cheese

  6. 1 tablespoon lemon and herb seasoning **meuniere sauce**

  7. 3/4 cup butter or margarine

  8. 2 tablespoons green onions -- chopped

  9. 3 tablespoons lemon juice

  10. 1 tablespoon minced parsley

  11. 1/4 teaspoon salt

  12. 1/4 teaspoon white pepper

  13. 1 dash hot pepper sauce

  14. 1 dash Worcestershire sauce

  1. Preparation : 1. Thaw frozen fish according to package directions.

  2. Beat egg and water.

  3. Combine cracker meal, cheese and seasoning; dip fish fillets in beaten egg, then roll in crumb mixture.

  4. Pour Meuniere Sauce in shallow baking dish; place fillets in dish, turning once or twice to coat both sides well.

  5. Bake in 350F oven 40 minutes, or until fish flakes easily. ** MEUNIERE SAUCE ** Combine all ingredients and simmer 5 minutes. NOTE: This recipe can be tripled or quadrupled for a large gathering; use a large baking sheet.
