  8. 1 ga Vegetable cooking oil

  9. 6 pounds Onions -- finely chopped

  10. 4 large Bell peppers -- finely chopped

  11. 1 bunch Celery -- finely chopped

  12. 1 head garlic -- finely chopped

  13. 8 cups Water

  14. 8 cans Tomato soup

  15. 4 cans Tomato sauce -- (#303)

  16. 1 cup Sugar

  17. 1 Bottle bay leaves

  18. 30 pounds Alligator meat -- chopped in

  19. Bite-sized pieces

  20. 6 bunches green onions -- chop finely (large)

  21. Salt and pepper -- to taste

  22. Cayenne pepper -- to taste

  23. First make a roux, being careful not to burn it. Cook until brown. Add

  24. 10 to 20 minutes. Add water,

  25. tomato sauce, soup, bay leaves and sugar. Cook this mixture for 1 hour, stirring every

  26. 10 minutes. Add meat and cook another

  27. hour. Add green onions when meat is tender and cook an additional 1/2 hour.
