  2. 3 eggs

  3. 2/3 cup pumpkin

  4. 1 teaspoon lemon juice

  5. 3/4 cup flour

  6. 1 teaspoon baking powder

  7. 2 teaspoons cinnamon

  8. 1 teaspoon ginger

  9. 1/2 teaspoon nutmeg

  10. 1/2 teaspoon salt

  11. 1 cup granulated sugar

  12. 1 cup chopped walnuts

  13. Filling :

  14. 1 cup confectioners sugar

  15. 7 ounces cream cheese

  16. 4 tablespoons butter

  17. 1/2 teaspoon vanilla extract

  1. Preheat oven to 375 degrees F.

  2. Grease and flour a 15 x 10 x 1 inch jellyroll pan or cookie sheet.

  3. Beat eggs at high speed for 5 minutes.

  4. Gradually beat in sugar.

  5. Stir in pumpkin and lemon juice.

  6. Stir in remaining dry ingredients together.

  7. Fold into pumpkin mixture.

  8. Spread in prepared or jellyroll pan or cookie sheet.

  9. Sprinkle with walnuts.

  10. Bake for 15 minutes.

  11. Turn out onto towel. Will stick to terry towel.

  12. Sprinkle with confectioners sugar.

  13. Roll cake and towel together and cool, then unroll.

  14. Combine all filling ingredients.

  15. Beat until smooth and spread over cake.

  16. Roll and chill.
