  1. 1 sm. purple onion

  2. 1 red pepper

  3. 1 yellow pepper

  4. 1 green pepper

  5. 2 zucchini

  6. 2 cloves garlic

  7. 3 tbsp. butter

  8. 1/3 c. olive oil

  9. 1/4 c. chopped basil

  10. 2 tbsp. chopped parsley

  11. 1/2 tsp. salt

  12. 1 pkg. vermcelli

  13. 1 lb. fresh shrimp

  1. Cut onion, peppers and zucchini julienne style. Cook and stir vegetables in hot oil and butter until slightly tender. Stir in shrimp, basil and parsley. Cook 3 minutes until shrimp are done. Pour over vermicelli; toss gently and serve. Good hot or cold.
