  1. 5 1/4 cups 1244ml Water

  2. 3/4 cup 177ml Green lentils - (abt 6 oz)

  3. 2 Turkish bay leaves

  4. 2 1/4 cups 533ml Medium bulgur (cracked wheat)

  5. 1 1/4 teaspoons 6 1/3ml Salt

  6. 1 teaspoon 5ml Ground cinnamon

  7. 1/2 teaspoon 2 1/2ml Ground nutmeg

  8. 1/4 teaspoon 1 1/3ml Ground cardamom

  9. 3/4 cup 69g / 2.4oz Slivered almonds - toasted

  10. 1/3 cup 20g / 0.7oz Caramelized onions reserved from chicken*

  1. * See the "Chicken With Olives, Caramelized Onions, And Sage" recipe.

  2. Bring first 3 ingredients to boil in large saucepan over medium-high heat. Partially cover pan, reduce heat to low, and simmer until lentils are almost tender, about 15 minutes.

  3. Mix in bulgur, salt, and spices. Cover; simmer until water is absorbed, about 10 minutes longer. Season with pepper. Discard bay leaves. Serve topped with almonds and reserved onions.

  4. This recipe yields 8 servings.
