  2. 2 pounds russet potatoes, peeled and quartered

  3. 1 tbsp. plus 1/2 tsp. salt

  4. 1/3 cup olive oil

  5. 1/4 tsp. pepper

  1. Combine the potatoes and 1 tbsp. salt in a large pan. Add enough cold water to cover the potatoes. Bring to a boil over medium high heat. Reduce the heat to low and partially cover the pan. Simmer the potatoes about 20 to 25 minutes until very tender, stirring occasionally. Set aside 1/2 cup of the cooking water then drain the potatoes. Return the potatoes to the pan and add the reserved cooking water, olive oil, pepper and the remaining 1/2 tsp. salt. Mash the potatoes well and serve immediately.
