  1. 1 lb Lean ground lamb

  2. 1/4 c Shredded Cheddar cheese

  3. 2 T Sweet pickle relish

  4. 2 T Finely chopped onion

  5. 1 T Finely chopped green pepper

  6. 1 ts Dijon-style mustard

  7. 4 Hamburger buns

  1. Mix the cheese, pickle relish, onion, green pepper and mustard.

  2. Shape lamb into 8 THIN patties about 4 inches in diameter.

  3. Spoon cheese mixture onto the center of four of the patties.

  4. Top each with another pattie, pressing edges to seal filling inside.

  5. Serve on toasted bun with lettuce leaf and sliced tomato.

  6. For variation, substitute dill pickle relish and Monterey Jack or Swiss cheese for the sweet relish and cheddar.
