  1. Salad:

  2. 1 bag spring salad mix

  3. 12 - 16 oz Craisins

  4. 1 - 24 oz can mandarin oranges (seedless)

  5. Orange pecans (see below)

  6. 1 jar Kraft Light Raspberry Vinaigrette Dressing

  7. 2 cups Asiago cheese , grated

  8. Orange Pecans:

  9. 1 cup sugar

  10. 1 Tbl grated orange rind

  11. 1/4 cup orange juice

  12. 1 tsp cinnamon

  13. 4 cups pecan halves, toasted

  14. 1/2 tsp orange extract

  1. Pecans:

  2. Bring sugar, orange rind, orange juice and cinnamon to a rapid boil in a heavy saucepan over medium heat. Stir in pecan halves; cook, stirring constantly. Until pecans are coated and syrup is absorbed. Remove from heat; stir just unti pecans separate. Spread onto waxed paper to cool.

  3. Salad: For the first layer of salad, combine spring mix (or other greens) to cover the bottom of teh bowl. Sprinkle with a layer of Craisins, Asiago cheese, oranges and pecans. Repeat all a second time to form two layers in the bowl. Just before servings, toss with Raspberry Vinaigrette dressing.
