  2. POTATO MUFFINS

  6. 1 c Flour

  7. 1 c Potato Starch

  8. 1 tb Sugar,

  9. 1 tb Baking Powder

  10. 1/2 ts Salt

  11. 1 1/2 ts Thyme, Fresh, Chopped, Or 1/2 ts. Dried Thyme

  12. 1 c Milk

  13. 1/2 c Potato, Cooked, Mashed, Warm

  14. 1 Egg

  15. 1/4 c Unsalted Butter, Or:

  16. Margarine

  17. 1/3 c Swiss Cheese, Or Cheddar,

  18. Finely Grated Makes 12 standard muffins Note; I have made these

  19. using no sugar and low-fat margarine, and do not

  20. notice much difference in the quality. Preheat oven to

  21. 400øF. Butter standard muffin tins. In a large bowl,

  22. stir and toss together the flour, potato starch, sugar

  23. (if used), baking powder, salt and tyme. Set aside.

  24. In a medium bowl whisk together the milk and mashed

  25. potatoes, then add the egg, melter butter (or margarine) and cheese, and whisk until well mixed.

  26. Add to the combined dry ingredients and stir just

  27. until blended. Spoon into the prepared muffin tins,

  28. filling each cup about 3/4 full. Bake until a

  29. toothpick inserted in the center of a muffin comes out

  30. 15 to 18 minutes. Cool in the tins for minutes, then remove. Source: Williams-Sonoma Kitchen
