  1. 1 cup Thick White Sauce

  2. 2 cups ground or finely chopped cooked meat (beef, veal, pork, ham or chicken)

  3. 1 tablespoon minced onion

  4. 1 teaspoon snipped parsley

  5. Salt and pepper

  6. 1 egg

  7. 2 tablespoons water

  8. 3/4 cup dry bread crumbs

  9. 1 package (8 ounces) frozen peas in cream sauce

  10. 1 teaspoon minced onion

  1. Directions Prepare Thick White Sauce.

  2. Stir in meat, 1 tablespoon minced onion and the parsley.

  3. Season with salt and pepper.

  4. Spread mixture in ungreased square pan, 8x8x2 inches.

  5. Cover; chill 2 to 3 hours.

  6. Divide mixture into 12 equal parts; shape each into a ball.

  7. Beat egg and water until blended.

  8. Dip each ball into egg mixture, then roll in bread crumbs until completely coated.

  9. Cover croquettes; chill at least 2 hours.

  10. Heat fat or oil (3 to 4 inches) to 365° in deep fat fryer or kettle.

  11. Fry croquettes in hot fat 1 1/2 to 2 minutes or until light brown.

  12. Drain.

  13. Keep croquettes warm in 350° oven until serving time.

  14. Prepare peas as directed on package except—add minced onion before cooking.

  15. To serve, spoon hot peas in cream sauce over croquettes.
