  1. 2 lbs lean ground beef

  2. 1 medium onion , chopped

  3. 1 (14 ounce) can tomato paste

  4. 1 (14 ounce) can crushed tomatoes

  5. 2 tablespoons chili powder

  6. 1 teaspoon ground cumin

  7. 1/2 teaspoon garlic powder

  8. 2 teaspoons salt

  9. 1 (28 ounce) can pork and beans in tomato sauce

  10. 2 cups corn chips, broken

  11. 2 cups cooked long-grain rice , hot

  12. 2 cups medium cheddar , grated

  13. 1 medium red onion , chopped

  14. 1 head iceberg lettuce , shredded

  15. 3 medium tomatoes , chopped

  16. 1/3 cup sliced ripe olives , pitted

  1. In a large non-stick frying, scramble-fry ground beef and onion until no longer pink and onion is soft.

  2. Drain excess fat.

  3. Add next 6 ingredients, mix well and simmer uncovered for 15 minutes.

  4. Add beans and heat through.

  5. Layer corn chips, rice, beef mixture, cheese, red onion, lettuce, tomato and olives on large platter.
