  1. Pica Pollo

  3. 2 lbs chicken

  4. 1/2 cup chopped parsley

  5. 1 small red onion, finely chopped

  6. 2 cups peanut oil

  7. 1/2 tsp mashed garlic

  8. 1 cup flour

  9. salt

  10. 2 lemons cut into wedges, for garnish

  11. Cut the chicken into small pieces.

  12. In a pot boil the chicken, onion, parsley, a pinch of salt and garlic until the chicken is tender but firm. Adjust the salt to

  13. taste. Take the chicken out of the water and reserve.

  14. Mix 1 tsp of salt with the flour. In a pot heat the oil. Cover the

  15. meat pieces in the flour and deep fry until golden brown. Drain the

  16. excess oil on a paper towel.
