  1. 16 slices bacon

  2. 8 chicken thighs or breasts

  3. finely grated orange rind and juice

  4. finely grated lemon or lime rind and juice

  5. 5 garlic cloves, crushed

  6. 1 tbsp chili powder

  7. 1 tbsp paprika

  8. 1 tsp cumin

  9. 1/2 tsp oregano

  10. 1 tbsp olive oil

  1. Wrap 2 slices of bacon around each chicken thigh or breast in a cross shape.

  2. Secure with wooden cocktail sticks.

  3. Place chicken in baking dish.

  4. For marinade, combine citrus rinds and juice, garlic, chili powder, paprika, cumin, oregano and olive oil.

  5. Pour marinade over chicken, cover for one hour at room temp.

  6. Bake for 45-60 mins at 375° until chicken is cooked and bacon is crisp.

  7. Skim excess fat from sauce.

  8. Serve with rice.
