  1. In a deep pot or pan with lid, boil chix in 1 qt. chix broth and 1 qt. water. Season liquid with your favorite taco seasonings and cumin. Bring to a boil and reduce heat to simmer until meat is tender. Strain meat (reserve juice if desired for side dish of rice). Bring a seperate skillet to med high temp. Add 2 Tbsp. of olive oil or enough to coat the skillet well. Fry corn shell. Remove from skillet and begin to assemble tacos. Add chix, spinach, onion, peppers, cheese and salsa and enjoy!
