  1. 4 eggs

  2. 2 1/3 cups white sugar

  3. 1 cup vegetable oil

  4. 2 cups canned pumpkin

  5. 3 cups flour

  6. 3/4 teaspoon salt

  7. 1 3/4 teaspoons baking soda

  8. 2 3/4 teaspoons cinnamon

  9. 2/3 teaspoon nutmeg

  10. 2/3 teaspoon cloves

  11. 1/3 teaspoon allspice

  12. 1 cup chopped nuts

  13. 1/3 cup raisins

  1. Preheat oven to 375 degrees.

  2. Grease two loaf pans, 24 muffin cups, or 6 mini loaf pans.

  3. Combine eggs, sugar, oil and pumpkin in a large bowl.

  4. Stir until smooth.

  5. Sift together dry ingredients and spices.

  6. Add to egg mixture along with nuts and raisins.

  7. Mix thoroughly and fill pans.

  8. Bake large loaves for 1 hour, 10 minutes; muffins for 35-40 minutes; and mini loaves for 45 minutes.

  9. Toothpick inserted in middle should come out clean.
