  1. 1 egg white -- lightly beaten

  2. 2 tablespoons milk

  3. 1 cup dry bread crumbs

  4. 2 tablespoons grated parmesan cheese

  5. 1/4 teaspoon salt -- pepper, garlic powder -- cayenne pepper and dried oregano

  6. 8 boneless skinless chicken breast halves

  7. 1 1/4 cups buffer or margarine

  8. 1 can tomato sauce -- (8 ounces)

  9. 1 teaspoon dried basil i cup -- (4ounces)shredded -- mozzarella cheese

  1. Preparation : In a shallow bowl, combine egg white and milk. In another bowl, combine the bread crumbs, Parmesan cheese-and seasonings. Dip each chicken breast in the egg white~ mixture, then in the crumb mixture. Melt but- ter in a skillet; brown chicken on both sides until no longer pink and juices run, clear. Meanwhile, heat tomato sauce and basil un- til warm. WhJn chicken is done, sprinkle with mozzarella cheese. Remove from the~ heat and cover for 2-3 minutes or until cheese melts. Serve with tomato-basil sauce.
