  5. 6 lb Green Tomatoes

  6. 2 ts White Peppercorns

  7. 3 ea Med. Onions

  8. 2 ts Whole Allspice

  9. 4 tb Pickling Salt

  10. 2 ts Whole Cloves

  11. 5 ea Thin Slices Lemon

  12. 2 ts Celery Seeds

  13. 3/4 c Sweet Red Pepper

  14. 2 ts Mustard Seeds

  15. 1 1/2 c Brown Sugar

  16. 2 ts Dry Mustard

  17. 1 1/2 c VinegarFresh red sweet pepper should be finely chopped.

  18. Wash and core the tomatoes; peel the onions. Slice the tomatoes and onions thinly, mix with the salt and let stand overnight. In the morning

  19. drain thoroughly. Put the tomatoes and onions in a large kettle and add

  20. the lemon slices, pepper, sugar, vinegar, and the spices and mustard tied

  21. in a bag. Bring to a boil and cook for about 30 minutes or until slightly

  22. thickened, stirring occasionally. Discard the spice bag and turn the

  23. relish into hot jars. Seal at once.

  24. Makes 4 Quarts. --
