  4. 2 t peanut oil

  5. 4 c sweet onion

  6. 2 c pear

  7. 1 c brown sugar

  8. 1/8 t cayenne pepper

  9. 1/8 t kosher salt

  10. 2 1/2 t cider vinegar

  11. heat oil in a large skillet, over a high flame

  12. add onions and saute for 8-10 minutes, until they begin to brown

  13. reduce flame to medium

  14. heat and stir for another 20-30 minutes, until caramelized

  15. stir in pears, brown sugar, cayenne, salt, and vinegar

  16. heat and stir until pears are tender-crisp

  17. remove from heat, drain off and reserve juices

  18. transfer onion mixture to a sterile jar

  19. heat reserved juices in skillet, over a medium flame

  20. heat and stir until juices have reduced to a syrupy glaze

  21. pour over onion mixture-mix well

  22. cover and chill indefinitely

  23. serve slightly chilled or at room temperature --
