  5. 4 Chicken breast halves;

  6. - Skinned, boned and sliced

  7. Salt and pepper to taste

  8. 4 cl Garlic; minced

  9. 2 c Water

  10. 1 tb Cornstarch

  11. 5 tb Corn oil

  12. 8 oz Fresh mushrooms; sliced

  13. 4 lb Chinese white cabbage; chop

  14. 2 tb Sugar

  15. 4 tb Soy sauce

  16. 6 Scallions; chopped

  17. In a bowl, toss the sliced chicken with the salt and pepper, garlic and cornstarch mixture. Set aside. Heat

  18. 3 tablespoons of the corn oil in a wok and add the

  19. mushrooms, cabbage and sugar. Stir-fry for 2 minutes,

  20. then cover and cook for 5 minutes. Remove from the

  21. wok. Heat the remaining 2 tablespoons of corn oil in

  22. the wok and stir-fry the chicken for 2 minutes over

  23. high heat. Add the soy sauce and mix well. Cover and cook for about 6 minutes, or until the chicken is

  24. cooked through. Add the cooked vegetables and the

  25. scallions. Toss everything together for about 1

  26. minute. Serve hot with steamed rice. --
