  1. 1 3/4 c. flour

  2. 2/3 c. granulated sugar

  3. 5 1/59 oz. ricotta or Philadelphia cream cheese

  5. 2 T. brown sugar

  6. 5-8 T. milk

  8. 2 to 3 c. Gala or Granny Smith apples,dice small

  9. 3 T. lemon juice

  10. 3 T. rum or apple juice -- Topping: Very little softened butter

  11. 1 T. granulated sugar

  12. 1/2 teas. ground cinnamon

  13. 1/4 c. chopped walnuts,

  1. Filling: Place apples in saucepan with sugar,lemon juice and rum. Stir and cook 10 minutes,stirring occasionally. Drain and reserve liquid. Cool apples. Add 1 T. flour to apples and stir well.Set aside. -- Dough: Mix flour with sugar,cheese, olive oil, milk and baking powder and form a smooth silky ball. Roll out dough onto floured surface into a 13 inch square. Slight butter dough. Arrange the apple mixture on dough and roll up ,jelly roll style. Moisten edge with reserved apple liquid to seal. With a knife cut into 1-inch thick pieces. Place them onto a parchment covered baking sheet. Brush with the apple liquid sprinkle with cinnamon ,sugar and nuts if using. Bake in 350^ oven for 20-30 minutes or until lightly brown. Any Apple mixture liquid left and be used to make a drizzle frosting with powdered sugar.
