  1. 1 1/2- 1 3/4 pounds sweet potatoes

  2. 1/4 cup olive oil

  3. course salt

  4. 1 cup Red pepper Relish

  5. 3 whole scallions, chopped

  6. 2 tablespoon chopped flat-leaf parsley

  7. Curried Red Pepper Relish

  8. 2 large red bell peppers cored, seeded & diced

  9. 1 red onion chopped

  10. 1 jalapeno mined (wear gloves!)

  11. 1/3 cup sugar

  12. 2 tsp Madras curry powder

  13. 1 tsp mustard seeds

  14. 1 tsp celery seeds

  15. cup sherry vinegar

  1. Peel potatoes and cut into ½" cubes. dump on baking sheet and toss with 1 tblsp oil and some salt. Roast until tender and starting to brown, flipping once with spatula (about 25 min). Cool to room temp.

  2. Put potatoes in bowl with the relish, scallions, parsley and 3 tbsp oil. Toss and taste for salt. Le sit for 30 minutes before serving.

  3. to make relish:

  4. combine all the ingredients in saucepan and bring to boil, stirring until sugar dissolves. Reduce heat and simmer 15 minutes until peppers are tender.

  5. Save any left over for up to one week. Good as relish on meat
