  1. --CAKE-- 1 1/2 c Cooking oil

  2. 4 ea Eggs, separated

  3. 3 ts Baking powder

  4. 1 t Cinnamon

  5. 1 1/2 c Raw sweet potatoes, grated

  6. 2 c Sugar

  7. 2 1/2 c Sifted cake flour

  8. 1/4 ts Salt

  9. 1 t Nutmeg

  10. 1 c Chopped nuts/walnuts/pecans

  11. 1 t Vanilla extract or flavor --FROSTING-- 1 lg Can evaporated milk

  12. 3 ea Egg yolks

  13. 1 1/3 c Flaked coconut

  14. 1 c Sugar

  15. 1 Stick oleo

  16. 1 t Vanilla

  17. 3 greased and floured 8-inch layer pans at

  18. 350 F. for 25-30 min. Cool and frost. FROSTING: Combine milk, sugar, oleo, egg yolks and vanilla in sauce pan. Heat until boiling. Add coconut and continue to cook

  19. 3 to 5 min. or until mixture thickens. Remove from fire, and place saucepan in container of ice and beat with wooden spoon until spreading consistency.
