  1. 300 ml / 10fl oz /

  2. 2 1/4 cups

  3. 15 ml 1-2 cloves

  4. 1-2 115 g 150 ml 60 ml 15 ml 15 ml 15 ml Vegetable oil

  5. Garlic, finely chopped

  6. Red Thai chilies, seeded and chopped

  7. Unsalted roasted peanuts, finely chopped

  8. Chicken stock

  9. Coconut milk

  10. Hoisin sauce

  11. Nuoc Mam

  12. Sugar

  1. Heat the oil in a small wok and stir inthe garlic and chilies.

  2. When they begin to color, add all but 15ml of the peanuts.

  3. Stir for a few minutes until the oil formthe peanuts begins to weep.

  4. Add the remaining ingredients, bring tothe boil.

  5. Simmer until the sauce thickens and oilappears on the surface.

  6. Transfer the sauce to a serving dish andgarnish with the reserved peanuts.
