  1. Ingredients (Serves 2)

  2. 100g queen scallops

  3. 100g small prawns or shrimps, peeled

  4. 2 handfuls of bean sprouts

  5. 1 small white cabbage, finely sliced

  6. 4 spring onions, chopped

  7. 100g sugar snap peas

  8. 1 large carrot, grated

  9. 2 tsp olive oil

  10. 1 tsp fresh, grated ginger

  11. 1 tbsp bottled or filtered water

  1. Pour in the water and olive oil into a large heavy bottomed frying pan or wok and heat until steaming.

  2. Toss the scallops and prawns into the pan and cook on their own for a few minutes, then add in all the other ingredients and fry, stirring with a wooden spatula every so often until the vegetables are tender, but retain some of their crispness. Serve immediately.
