  7. 1 tb Olive oil

  8. 1 ts Sugar

  9. 1 ts Salt

  10. 1 1/2 c Semolina flour

  11. 1 1/2 c Bread flour

  12. 1 1/2 ts Yeast

  13. 1 1/2 POUND LOAF

  14. 1 1/3 c Water

  15. 1 1/2 tb Olive oil

  16. 1 1/2 ts Sugar

  17. 1 1/3 ts Salt

  18. 2 c Semolina flour

  19. 2 c Bread flour

  20. 2 1/2 ts Yeast

  21. Bake according to manufacturer's instructions.

  22. Author's notes: "Semolina flour has a very high gluten content, and therefore makes an exceptional loaf. Expect a yellow-tinted interior and a well-developed wheat flavor."

  23. My notes: I made this bread 6/3/96. I used durum wheat flour

  24. instead of semolina. Barney unplugged my machine, so I had to finish

  25. the second rise, and bake it in the real oven. It turned out great.

  26. This bread is not sweet, it has almost a "sour" taste. Holds up nice

  27. for sandwiches. I'll make it again.
