  1. 3 fresh cuttlefish

  2. 5 cloves garlic

  3. 2 pieces red chilli

  4. 2 spring onions

  5. 3 slices ginger

  6. a little wine

  7. Seasonings:

  8. 1 tbsp sugar

  9. 1 tbsp vinegar

  10. 1/2 tsp salt

  11. 1 tbsp soy sauce

  12. 2 tbsp sesame oil

  1. Remove head, tail and skin of cuttlefish. Slit open the body, clean thoroughly. Cut criss-cross pattern on the body of cuttlefish before cut into 1" long pieces. Trim the head and tail. Leave aside.

  2. Bring half a pot of water to boil. Add 1 spring onion, 2 slices ginger and a little wine. Blanch cuttlefish. When cuttlefish beginning to curl, remove and place on plate.

  3. Chop garlic, red chilli, spring onion, ginger and mix with seasonings (heat up sesame oil before use). Mix well and pour over cuttlefish and serve.
